Wellbeing
Our wellbeing could well be jeopardised in this season of spending too much time at home and with the fears of the looming coronavirus, COVID-19. Therefore, it is important to take care of our physical health by continuing to exercise and to eat well.

In addition, we need to remember to eat well in this time because a healthy gut is crucial in mounting a positive response towards COVID-19. According to multiple professors studying about COVID-19, adopting a Mediterranean diet will help to build up defences from the inside out and further strengthen the immune system.
For instance, natural yoghurt, artisan cheeses, bacteria, and yeast-rich drinks such as fermented milk or fermented tea, fermented vegetable-based foods, such as Korean kimchi (and German sauerkraut) are all great options to try out.

In At-Sunrice GlobalChef Academy, our students have been coping well with the circuit breaker in their 3-weeks of e-learning so far. Hazirah, a culinary arts student currently studying in Term 1 shares about how she is enjoying her time cooking at home.
Satria, a pastry and bakery student has been putting all his knowledge in practice as seen on our Facebook page. Follow his recipe below:
Step 1: Make the Vanilla Sponge
- Mix egg yolk, milk, baking powder and salt, vanilla essence and cake flour well together in a bowl.
- Mix egg whites and sugar gradually till you get a stiff peak (meringue) in another bowl.
- After that, add half of the meringue to the flour mixture and mix them well together. Put the remaining meringue in the bowl and fold it gently. Do not overfold or mix.
- Place a tray with baking paper on top. And bake in 180C for 10 minutes in a preheat oven.
Step 2: Make the Strawberry Jello
- Scale gelatin and mix it with water. Put aside till swollen.
- Put strawberry puree and water in a saucepan
- Add sugar
- Bring to boil and add in the gelatin mixture. After that, place it in the mould to allow it to harden*
*I prefer to place it in the fridge
Step 3: Make the Tiramisu
- Beat and mix Mascarpone Cheese in a bowl well
- Use a mixer to whisk heavy cream till 60% stiff.
- Pour cream into mascarpone mixture and fold it together
- Place in the mould and add the strawberry in the middle.
Step 4: The Semi Finish
- Cut the sponge into round shapes as large as the cream of tiramisu mould
- Brush with coffee mix (coffee + sugar + hot water)
- Cover the cream with the sponge
- Refrigerate for 2 hours
Step 5: The Finishing
- Take out the tiramisu. Its ready to eat!
- For a more professional look
- Glaze the tiramisu with the white chocolate glazing and sprinkle roasted dice nuts on the bottom side
- Add round chocolates on top
- Add strawberry jello
- Surround the strawberry jello with vanilla Chantilly cream
- Sprinkle some dried roses on top for the last touch
